  2. Scoop out the two halves with a portioner (like an ice cream spoon or normal spoon) and freeze them in a freezer bag.
  3. Cover and store the leftover watermelon halves in the fridge overnight.
  4. Next day, prepare your smoothie by adding coconut milk, frozen watermelon and lime into your blender, and blend until smooth.
  5. Then scoop the smoothie into your watermelon bowls, and enjoy!

This recipe is super fruity, and refreshing. You can taste the watermelon out, which is SO amazing. But the lime is a perfect addition and adds a citrus taste that combines the sweetness of the watermelon very well.

  • 1 Blender (high-speed or other blender works or food processor)


  • 0.5 cup coconut milk (canned one is thicker and creamier but contains more calories)
  • 1 small watermelon (the shell for the bowl, and the inside about 3 cups – to be frozen- for the smoothie
  • ¼ whole lime with peel, organic ( unwaxed) or 1 tsp lime juice)


DAY 1: How to make the Watermelon Bowl

  • Buy 1 small or medium size watermelon for 2 people.
  • Then cut the watermelon in half.
  • Next, scoop out the watermelon "flesh" with a spoon or portioner (like an ice-cream spoon) and freeze it in reusable freezable silicone bags.

DAY 2: How to make the watermelon, lime and coconut smoothie

  • Add the coconut milk to your blender or food processor.
  • Then toss in the lemon, or squeeze some lemon juice into the coconut milk.
  • Now it's time to add the frozen watermelon.
  • Blend all on a low setting, to make sure the smoothie turns out thick and creamy. Use your tamper to push down any frozen pieces from the sides.

Can you swap the coconut milk with almond milk?

Sure, you can use any milk that you like for this smoothie. Coconut milk gives this recipe a tropical and creamy touch. Almond or rice milk is also a good addition although they are thinner, so make sure to not add too much. 

Soy milk can be used as well, because it’s the closest in terms of nutrition to cow milk, and therefore very healthy. But it’s not everyone’s cup of tea!

Can you use water instead of coconut milk in this recipe for the watermelon smoothie?


If you prefer a less creamy taste or like to reduce calories even further, you can replace the coconut milk also with water.


Use coconut water, which adds a tropical vibe to this smoothie, is also hydrating, high in potassium, and helps with kidney stone prevention while it’s low in calories.

Besides it even is beneficial for your skin!

Is this smoothie vegan?

Theoretically, yes this healthy watermelon fruit smoothie recipe is vegan friendly.

Because watermelon, lime and also coconut milk (sometimes) are vegan.

Although it depends where you draw the line.

You should watch out which coconut milk you buy, as often money is used during the production to collect coconuts, and not under very fair conditions. 

How to be sure, that the coconut milk does not involve monkeys collecting the coconuts?

It’s often hard to know for sure which companies do involve monkeys in their coconut milk production, as the companies are not transparent and would not admit it.

But brands that are probably okay to use, are:

Is this smoothie a dairy-free smoothie? 

Yes, this recipe for the watermelon smoothie is also dairy-free.

You can however swap out coconut milk for dairy milk, or add greek yogurt.

Tips – How To Make The Best Smoothie 

  1. Buy 1 whole (small or medium-sized) watermelon for 2 people: Use the flesh to freeze and make the smoothie the day after. And the watermelon rinds in as a bowl for the next day.
  2. Ensure to pick a ripe watermelon (see the guide on how to choose the right one).
  3. When you freeze the watermelon do not transfer too much “watermelon juice” into your freezer bags by scooping out the flesh from the rinds (this will water down your smoothie).Add only a splash of coconut milk first, then you can add more if needed because the watermelon is already very high in water.
  4. To make a thick watermelon smoothie bowl, only blend on a very low setting, and mash the smoothie with your tamper to ensure all fruit pieces are blended thoroughly.
  5. You can use lime juice or lime in with peal (as the peel contains many benefits).
  6. If you chose to blend your lime with the peel, you need to have a high-speed blender and might want to blend the lime with the milk and 0.5-1 cup of fruits first, to make sure the peel is fully blended.
  7. Get organic (=unwaxed) limes, if you toss in the lime with skin to your blender
  8. Don’t blend for too long, as the watermelon smoothie turns liquid quickly.
  9. The smoothie should be served immediately or to be frozen for later (if stored in the fridge for up to 24 hours, then only in a thermo-mug. Otherwise the liquid will separate and the consistency won’t be nice and creamy).
  10. Don’t add any sweeteners to this recipe, as watermelon contains already fruit sugars. (But if you must, then add honey, which mixes well).



11 Tipsow to avoid, that your recipe with watermelon, lime and coconut is melting so fast?

Smoothies do melt fast. Some are faster than others. The higher the water content in your fruits or veggies, the faster your smoothie bowls tend to thaw and melt.

So here are a few tips on how to avoid your watermelon melting too fast:

  1. Freeze your bowl 30-60 minutes beforehand
  2. Rinse your bowl, and then freeze it (this way the water drops turn to ice)
  3. Use minimal additional liquid (coconut milk for example)
  4. Use a thicker liquid, such as coconut milk, instead of water or almond milk
  5. Pour some of the milk into an ice tray, and add some frozen “ice” milk cubes to the end of the blender.
  6. Add other frozen fruits to your smoothies, such as frozen peaches, strawberries, kiwis, bananas, pineapples or fresh apple & pear, to make them thicker and creamier and this way they won’t melt as fast. 
  7. Take your watermelon only at the last second from the freezer, so it won’t thaw
  8. Don’t blend, use a low blender setting and mash the smoothie with your tamper, to make it a super thick smoothie to begin with
  9. Pour your smoothie instead in a bowl, into a thermo-cup!! (Works great!!)
  10. You can also freeze your smoothie once poured into a bowl or thermo-mug for another 1-2 hours if you have time. 
  11. Use a coconut bowl as they keep smoothies cold for a little longer than regular bowls.

How To Store The Watermelon Lime Smoothie For Later

Can you store the watermelon lime & coconut smoothie in the fridge?

Usually, smoothies last up to 24 hours in the fridge when they are covered.

Although smoothies with a high water content like this one should be ideally either enjoyed immediately or frozen.

Because the smoothie will dilute, and the water content of the watermelon will separate and sink to the ground.

If you do store it in the fridge for 24h, then

1. You need to stir the smoothie thoroughly before you consume it

2. It’s best to keep it in a thermo-cup in the fridge. They are AMAZING! And can keep the consistency and temperature of your smoothie for 6-8 hours, and even 12-16 hours afterwards the smoothie should be much cooler and still thicker, than if you would keep it in a normal glass or container.

I even added one ice cube in one smoothie once, and the ice cubes still existed the next day, while the smoothie was in a great thick consistency!
